On Friday, November 8th I was lucky enought to be invited among the few selected ones to attend the première of the Italian Michelin starred Chef Nicola Dinato, guest Chef of CuCina Italian restaurant at Marco Polo Hong Kong hotel.
A fine 4 courses dinner, perfectly paired with Perrier-Jouet champagne and beautifully presented by the 4-hands work of Chef Andrea Oreste Delzanno & Chef Nicola Dinato.
The entree was a delicious Mediterranean proposal: Sicilian red prawns with grilled razor clams and legumes. It was paired with Perrier Jouet Blanc de Blancs and I shall admit it was not intense enough. Too fizzy on the palate and not perfumed on the nose, as usually expected by Blanc de Blancs (which is usually my fav bubbles!!)... quite disappointing on this, but the plate was gorgeous and I enjoyed it fully with those delicate notes of perfumed fresh seafood.
Next, it came a magnificent Italian cauliflower Risotto with Hokkaido scallop and tangerine. Chef Nicola Dinato perfectly mixed the most genuine Italian culinary tradition with local fresh ingredients, conveying fresh perfume and savour to this fusion plate. Paired with Perrier Jouet Belle Epoque 2012!
Main course was a super tasty US beef tenderloin with leeks, figs, sweet and sour red onions, supremely topped with eggplant sauce.
This was a delicious full intense dish, perfectly paired with Perrier Jouet Belle Epoque 2010: for real gourmands!
Final touch: an unconventional Tiramigiù (instead of Tiramisù!), with white coffee ice-cream and Sabajon foam, Amaretti and Lady fingers, gorgeously paired with Perrier Jouet Rosé.
End of the day, an outstanding dinner with master Chefs: both Mr Andrea Oreste Delzanno and Mr Nicola Dinato perfectly know how to enhance Italian culinary art and perfectly match with local raw materials.
